So I have started a search for good homemade garlic rolls. I'm looking for easy, buttery, bready, and good. I started with a no kneading dough....result a dougnuty kinda of dough. It was good (really good) but not quite what I was looking for. so I'm going to make Italian donuts out the leftovers. mmmm! Here's the recipe.
Ingredients:
- 1 3/4 cup warm water
- 1/4 cup olive oil
- 1 tsp sea salt
- 1tbsp sugar
- 1 1/2 tbsp active dry yeast
- 5-5 1/2 cups of unbleached all purpose flour
Garlic Butter
- 1/4 cup of olive oil
- 1/4 cup of butter
- 4-6 cloves of garlic minced
- 2tbsp fresh lemon juice
- sea salt to taste
- 1/4 cup parm (for the end)
- Combine water, olive oil, sea salt, sugar, and yeast. Mix to dissolve....let it get all bubbly about 5 minutes
- Add flour. Mix it all up...don't knead. I had to get my hands in the bowl though tomix it all up. You get something like this.
- Then put in a bowl, cover, and set in a warm place until doubled about 1-3 hours.
- Chill dough for about 20 minutes so it is easier to handle. Line your sheet pans with parchment paper. Oil up a wooden cutting board or the counter.
- Divide your dough in half...then slapit down a few times to stretch it out....you want a rectangle of about 5" x 16" that is about 1'2" thick....slice in 1/2" x 5" strips
- Then sprinkle the dough with flour....and tie into a knot (over, under, and through) they look something like this
- Preheat oven to 400...let the knotsrise a little
- Make up your butter mixture...cut upgarlic....if you put the tip of your knife on the board use it as a lever it makes cutting things really small a lot easier (see picture)...then put all ingredients in a pot and bring to boil
- Bake knots for 12-15 min
- Throw knots in a bowl with some ofyour butter mixture and toss around....add your parm
I went to the gym this morning and rode the bike for the first time in a long time....my butt hurts!!!!! So what's on the agenda for the rest of the day.....make strawberry jam, 4 loads of laundry, clean up the kitchen, paint a bathroom, make dinner, go for a run later, take care of two boys and three dogs. Ready, Set......GO!
